The base beer is a blend of one, two and three-year-old Danish Wild Ales aged in white wine barrels. We racked this onto freshly destoned and crushed white Saturn peaches at a rate of over 600 grams of peaches per liter, and left it to macerate with the fruit for over a month before bottling. Barrel #1 - gose brewed with barley, oats and wheat, hopped with Harlequin and Nectaron, and fermented with our mixed culture in a Washington Syrah barrel. Refermented with a Brettanomyces blend in a neutral red wine barrel on Collins Family Orchards Chelan cherries from the 2024 harvest. Barrel #2 – gose brewed with barley, oats and wheat and steeped with lemon and coriander. Fermented with our mixed culture in a Washington Cabernet Franc barrel. 5% Shortly after we started distributing, we had our cursed old brewery truck break down while carrying a load of kegs to our distributor. Our distributor was about to close for the weekend, and we had no way to get them there in time, and nowhere to store them in good condition during the opressively hot weather. As is our habit during times of stress, we sought a cold beer at the newly opened taproom and growler station around the corner, Tin Bucket. After chatting with the owner, he expressed his disappointment at not being able to get our beer. To cut it short, he and his partner bought the entire truckload, saving not just the beer, but quite literally our business. This beer is for them. We worked with them to blend this from three different years of our lambic inspired barrels. We chose a blend with a beautiful and expressive Brett character that has only blossomed during its extended conditioning. Our favorite beer to date. - de Garde

8% Oud Beersel Bzart Kriekenlambiek is a kriek lambiek that was finished with Champagne yeast. It was produced from 13 month old lambic with Haspengouwse cherries aged for 6 months in 130 year old barrels.

8% BZART Lambiek merges two major traditions, the traditional method used for sparkling wine and the spontaneous fermentation that defines Lambic. The result is a natural, sparkling Lambic beer from Belgium. Lambic is one of the oldest surviving Belgian styles, with roots around 1300. The Lambiek Oud Beersel used for BZART ferments for twelve months in wooden barrels, then is bottled with a tirage liqueur of sparkling wine yeast and sugar for a second fermentation. The beer ages in the bottle for at least nine months, which creates and traps fine carbonation. Remuage and degorgement remove yeast sediment. No sweetening or liqueur d’expedition is added. The final beer is a dry, sparkling Brut Lambic with a complex flavor profile.

Blending of 2-year-old and 4-year-old lambics (for nearly 45% of the blend), to reach an average lambic age of over 33 months at bottling. A complex beer, with a long shelf life and an evolving taste.

8.6% bottling date: 17/06/21 This iteration of Zenne y Frontera is a Amontillado, Oloroso & Palo Cortado Blend For this Zenne y Frontera, we blended lambikken originating from seven different sherry barrels; three Amontillado barrels, two Oloroso barrels and two Palo Cortado barrels. The barrels were sourced with two different bodegas: Josefa Pérez Rosado (closed) and Fernández-Gao (started up again in 2014). The weighted average age of this lambik is 28 months at the moment of bottling. Three quarters of the five different lambikken used was brewed by us, and about half of the cereals of these brews were Pajot-grown. We did not blend in young lambik. -3F

7.9% The Cuvée Miel is a special version of the Cuvée Armand & Gaston. This geuze is a blend of one-, two-, three- and four-year old lambikken that have been infused with honey on the coolship. While blending, we added some more local honey. The weighted average age of this blend upon bottling was more than 24 months. 100% 3 Fonteinen brewed lambik. 7.7% For this, Druif, we co-fermented Belgian Dornfelder with one- and two-year old lambik in a 53/47 cut. We used the freshly pressed and shortly skin-macerated juice and put the unfermented juice with young lambik for continued fermentation in stainless steel. Afterwards, we blended with two-year old lambik. All lambikken originate from seven different barrels and seven different brews. The final fruit intensity is 31.6%. EN 3 Fonteinen Druif maceration of grape (must) on / the co-fermentation of grape juice or wine with traditional lambic. No addition of juices, syrups or artificial sweeteners. Unfiltered. Unpasteurised.

6% 3 Fonteinen Schaarbeekse Kriek is the result of macerating local hand-picked Schaarbeekse cherries on young traditional lambic for at least one year, in a proportion of one kilo of sour cherries per liter of lambic. The cherry lambic is then blended with young lambic and bottles, after which our famous Schaarbeekse Kriek matures for another year at least in the bottle. Refined and with evolution in the glass. Natural fruit, no juice, syrup or sugars added. Unfiltered and unpasteurised. -3 Fonteinen

6% Hanssens Scarenbecca Kriek is a regularly released krieklambiek that is blended with wild Belgian cherries. It is bottled in 37,5cl bottles and is 6% ABV. The cherries used for this were originally of the Schaerbeekse vareity, however due to a lack of supply, Hanssens has switched to primarily Belgian Kelleris cherries from the Tienen area, supplementing these with Schaerbeekse cherries supplied by their growers. -Lambic.info

6% As with all Gueuzes, Hanssens is a mixture of several vintages to produce a lambic which is refreshingly fruity. This is the result of blending different lambics of different ages. (10,0% ABV) Worldwide seen as one of the best beers in the world. It's a very balanced beer, with a full-bodied taste and a perfect equilibrium between malty, bitter and sweet. 8% St.Bernardus Prior 8 stands out with its fruity aroma, reminiscent of tree fruits like red apples, but complemented by exotic touches of figs and dates. 8% St.Bernardus Tripel is a traditional abbey ale brewed in the classic "Triple" style of Belgium's best Abbey Ales. It has a blond to pale amber color with a wonderful head, slightly sweet aroma and the orangey-grassy flavors of hops in the finish. Wonderfully drinkable and surprisingly light.

5.5% Originally called "Ouden Tripel", this ancient beer has found a new élan as a regional specialty under its current name: "VanderGhinste Roodbruin". The main ingredients of our Vanderghinste Roodbruin are malted barley, wheat, hops, water, and caramelized malts. These are used to brew a top-fermented beer. Blending this beer with lambic beer aged in oak barrels for 18 months, results in this specific West Flanders Red-brown beer. Its typical flavour is characterized by a well-balanced, hardly noticeable sourness. This first flavour impression is soon followed by a second pleasant discovery: a slight bitterness followed by a hint of sweetness. 11% This is the house beer for the famous De Garre pub in Brugges, Belgium. Brewed using traditional Belgian triple base with three times the amount of malt allows the brewer to achieve the 11% ABV.

Beer and chocolate trapped into one single glass, a liquid milky draught with a backbone of bitter malt. The alcohol warms the throat and, in the finish, you will pick up traces of cloves, citrus, orange and mocha. The heaviest of the Rochefort beers, the 10 is a quadrupel style beer and can be recognized by its blue label.

The ageing process adds a fruity note, which strikes a subtle balance between the beer’s full-bodied yet complex flavour and bitterness. The beer was first brewed in 1931 and owes its unparalleled taste to the quality of the water, the hops and the yeast used. The brewery has selected very aromatic and unique hop varieties, which hark back to the first brewmaster of Orval, who hailed from Bavaria. The beer’s aromas are very pronounced while maintaining the right level of bitterness thanks to the English method of dry hopping. 7.5% Rochefort 6 (red cap, brown beer, 7.5% ABV). Reddish colour, brewed only about once per year, representing approximately 1% of total beer production. This beer begins with a density of 16.5º Plato is 7.5% ABV. “Rochefort 6” is the oldest Rochefort Trappist beer, and was brewed empirically until the end of the Second World War. Until 1958, this was the only Rochefort beer that was bottled in both 33 cc bottles and 75 cc bottles. It has a strong malt taste and is slightly bitter.

12% The Gulden Draak Imperial Stout is a dark brown to black colored beer and is the heaviest beer in the Gulden Draak range with its 11° alcohol by volume. The typical roasted flavor is obtained by adding roasted, caramelized malt used exclusively for this purpose. It is a very well balanced heavy beer. The finish is rich and powerful. When tasting this specialty beer, you will discover aromas of banana and chocolate. The secondary fermentation comes into its own beautifully and will balance out the higher alcohols perfectly. - Van Steenberge

10.5% Gulden Draak has been breathing fire at the Van Steenberge brewery since 1986. This characterful, fiery beer was originally commissioned by the Cruyl brewery in Assenede. At the time, it was a festive beer brewed just once a year for the Assenede fanfare. Gulden Draak originated when Jozef Van Steenberge received one of his Italian customers back in 1986. The Italian visitor could feel the fire and insisted on buying the beer. At first, Jozef refused because he felt that the beer was too strong, but then he agreed on the condition that an order of 100 hectolitres was placed. At the time, it was a large amount that guaranteed an entire week of production. A beer with character also deserves a bottle with character, a unique white bottle, they decided together. -Van Steenberge

The particularly rich and complex flavor palette and full head of foam is also found in the Gulden Draak 9000 Quadruple. However, the sweet notes of caramel remain reserved for the Gulden Draak Classic. Gulden Draak Quadruple Family The new recipe based on 4 times more malt gives the Gulden Draak 9000 Quadruple a deep golden amber color and a slightly fruity aroma. Together with the soft and slightly sweet taste, this creates a beautifully rounded bouquet with notes of dried fruit. Like the other specialty beers from Brewery Van Steenberge, Gulden Draak 9000 Quadruple is a top-fermented beer with secondary fermentation. 6% Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months.

11.1% For our 7th anniversary we once again reached into our barrel library and picked two of our most unique beers to blend to celebrate the occasion. First, an Imperial Rye Stout aged in rye whiskey barrels lending complex chocolate and spice notes. To this we blended an Imperial Brown Ale aged in whiskey barrels that formerly held Pinot Noir red wine, giving notes of toffee and dried fruit. 14% Bottleworks XXVI is a rye whiskey barrel-aged barleywine that was aged in a single 7-year Russell Reserve rye whiskey barrel for 16 months. This barleywine was brewed in collaboration and reserved to celebrate Bottleworks' 26th anniversary. This celebratory barleywine was brewed with a rich base of English pale, amber, crystal, oat, caramelized oat, and pale chocolate malts. Away Days of course hails from the U.K. and this British/Polish connection was too fun not to celebrate. Woytek is full of toasty, caramel-like malt character, and brewed with Polish and English noble hops, finishing at an easy 5.3%. - Threshold

And for the jet setters amongst us, you can even find it in 47 countries around the world, from Australia to the UAE. ‘Old Speckled Hen’ has a full, smooth flavour and is very easy to drink. Its rich amber colour and superb fruity aromas are complemented by a delicious blend of malty tastes. Toffee and malt combine with bitterness on the back of the tongue to give a balanced sweetness. This, all followed by a refreshingly dry finish.

4.2% It is, quite simply, a wonderful beer. It is exceedingly pale (21-22 units colour), with just a hint of colour in its cheeks from the dash of crystal malt. It has a massive orange fruit aroma from the challengers, balanced by biscuity malt. Juicy malt and tart hops vie for attention in the mouth while the finish is tart and hoppy but well balanced by creamy malt. The bitterness rating is a substantial 36-38. The tangy fruit lingers on the back of the tongue until it develops a hint of orange liqueur. -Coniston

5.1% Das Bier is the name we have given our Kölsch-style ale. We start brewing this beer in June so it is available in late June, early July and we will try to keep it around for most of the summer. We first brewed Das Bier in fall of 2013 and it had such a good reception we decided to make it one of our regular seasonals. In both 2014 and 2015 this beer was only available in keg, we bottled it for the first time in 2016. As usual with we try to stay as close as possible to what a traditional Kölsch is supposed to taste like, although it is our interpretation of the classic style. Bright and clean, Das Bier is perfect for those hot Oregon days. It has a crisp malt character with a touch of hop bitterness. -Heater Allen

6.75% For the 16th anniversary of Brouwer’s cafe, we collaborated with the North Fork brewery from Deming, WA to create 3 beers to celebrate Vern’s beer bar in Fremont, Seattle. Eric & Paul brewed spontaneous beers at each brewery with Mecca Grade malt and put aronia berries in the coolship. After a year of barrel-aging we introduced chardonnay lees from Domaine Drouhin. This is the unblended North Fork version utilizing Argentinian Cascade hops from 2006. 100% naturally carbonated by bottle fermentation with wildflower honey. Thanks for everything, Vern! 14% Unfined/unfiltered/spontaneous ferment Mavis’s Malbec is a very fun and lively expression of Malbec grapes hailing from Strand Vineyard in Naches Heights AVA. The vineyard is LIVE (low intervention viticulture & enology) certified and Salmon Safe in WA state. The grapes were spontaneously fermented on their skins and punched down daily before finishing off in stainless steel. It was bottled early, with the slightest amount of dissolved CO2 still in solution. It is full of big berry flavors, medium tannins and would pair well with creamy cheeses and games meat. -Barmann

We continue to work with farmers throughout the valley to keep their old vine plantings of varieties like pinot blanc and explore with growers the opportunities for expanding the narrative on what the Willamette Valley can grow exceptionally well with additions of varieties like Aligote and Sauvignon blanc and other varieties that express well in a cool river valley climate. We are excited to continue this conversation about the potential of blends from the valley, these styles are especially well suited to the exuberant character of young vines. Wines are fermented in neutral French barriques and a portion in tank, full malo-lactic fermentation is completed before the wine is bottled. We love the Yuzu citrus and key-lime profile of this wine!

12.5% 2024 brought us another opportunity to grow one of our favorite wines, affectionately named Orange Crush, for its delightfully crushable style and reminiscent of adult Sunny D. We expanded our purchasing of old vine Pinot Gris from the Ponzi family bringing in fruit from their Aurora and original vineyard sites. We also source all of the Riesling and Muscat from the old own-rooted vines at Ponzi as well. Ponzi’s vineyards are in the Laurelwood District AVA on the soil of the same name and face east, collecting the morning sun. The Tsai Vineyard in Yamhill-Carlton AVA makes up the remaining Pinot gris, this site sits at around 600ft elevation and is north-east facing, own-rooted and planted to mostly Pinot gris and Pinot blanc, a rare thing in the Willamette Valley! Skin-fermented Pinot gris has a staggered co-fermentation with early Muscat and Riesling it’s these aromatic varieties that give this wine its playful tropical juiciness and makes it so dangerously crushable.

Superbloom is a complex, utterly unique wine that was originally made to express the specialness of Love Ranch vineyard in the Sierra Foothills.
