For the IYKYK crowd, this direct press white would have been 2022 St. Reginald Fais Do Do in a different vintage, but with an addition of Pinot Gris, Aligoté and Riesling to make it a touch brighter and more quaffable. Reminiscent of Muscadet with a couple years of age on it, this PYT is ready for raw oysters, crab boils, squash enchiladas and all the fried things. Pass it to me now!
Grapes: Sauvignon Blanc, Chardonnay, Pinot Gris, Aligoté, Riesling
Vinification: Direct press into French Oak (90% neutral / 10% new). Full lees aging, racked to stainless steel two weeks before bottling with a small SO2 addition at racking.
