Own-rooted, old vine Riesling (87%), planted in 1982, and Sauvignon Blanc (13%) farmed at Red Willow Vineyard, the Westernmost vineyard in Yakima Valley. No herbicides. Organic farming trial on Kobayashi contracted acreage, not certified (yet). Grapes are hand-picked, destemmed and berry sorted with a 3-week maceration on the skins in the winery cold-room in stainless steel bins. Spontaneous native yeast co-fermentation, followed by pressing into stainless tank. Bottled when residual sugar was appropriate for natural carbonation, finished dry, and disgorged after >1 year on lees, bottle-aged for an additional year.
