This Cabernet Franc is coming from two sites within 30 miles East of our winery. Both sit on the edge of the Columbia River, which brings the cool and constant winds that preserve the freshness and verve present in this wine. It expresses aromas of herbs and violets followed by a depth of savory under the fresh fruit of raspberry, huckleberry, and finishes with a fresh cracked peppercorn.
In the vineyard this fruit was farmed 100% organically by hand. In the cellar it saw 50% whole cluster fermentation with a touch of carbonic maceration early on in the fermentation. Then, only very gentle foot treading once daily throughout the duration of its long and cool fermentation. We prefer cool fermentations as they help preserve the more delicate nuances in the wines. It was pressed into neutral French oak barrels before aging on the lees for 18 months.
