We mashed the stout with English Maris Otter malt, then added our favorite chocolate and caramel malts from Simpsons in the UK. From there, we added Ethiopian Niguise Nara from our friends at Figure 8 Coffee Purveyors in Austin. The Niguise Nara goes through a 56 hour anaerobic fermentation that creates a creamy lactic character. Figure 8 describes it as “Very Fun, Floral, Sweet, Fragrant, Strawberry Ice Cream, Jasmine, Lime.”
