Producing this cider is the equivalent of asking the fruit from our Eden orchard to sing an Aria without orchestral accompaniment on the main stage at the Metropolitan Opera. There is no place to hide. Whatever that fruit provides is how the cider turns out. No pitched yeast, no nutrient, no racking, no carbonation, no added sulfites. Our cold climate means the fruit has lots of acidity, and ferments in cold October temperatures. Both of those features mean that spoilage organisms are mostly discouraged, and the resulting cider has deep apple character that makes a fantastic dinner wine.
