Praying Mantis is a select blend of four outstanding bourbon barrels from our stores, three Woodford Reserve and one Heaven Hills. When tasting through our barrels these four quickly rose to the top, scoring high marks across the board – specifically for spirit quality, chocolate character and a combination of unique qualifiers – vanilla undernotes, wood tannin structure and caramelized sugar.
We chose to stuff a hefty amount of Vanilla beans from Indonesia, Comoros and Madagascar, into the barrels for an extended period of time to enhance the already inherent qualities of the beer. The results are special, a classic but modern bourbon barrel aged imperial stout!
